All of our lamb trunks are wrapped, then placed in a meat container with other parts and either weighed together or individually weighed and labeled.

All of our lamb fronts are over wrapped, then placed in a meat container with other parts and either weighed together or individually weighed and labeled.

Each shoulder of lamb is over wrapped and then boxed.
Mutton Cuts
MUTTON LEG [BONE IN]
All of our lamb breasts are over wrapped and boxed
MUTTON LEG [BONELESS]
Each boneless leg of mutton is vacuum-packed and canned.
OVINE LEG PAD
Each leg of ovine PAD is vacuum packed and then boxed.
OVINE PAD LEG CHUNK
The muscles of our legs are deboned and prepared PAD, then vacuum-packed and canned
OVINE SHOULDER PAD [BOX-PACKED]
Each boneless mutton shoulder is vacuum-packed and canned.
OVINE SHANKS
Our ovine shanks are offered in hind shank or fore shank. They are wrapped and then boxed.
MUTTON HAND DICED
Our hand-cut mutton cubes are vacuum-packed and bagged in 5 or 10 kg bags and then boxed.
OVINE FRONT CHOPS
There are 11 ribs per loin and are over wrapped and then boxed.
OVINE BACK CHOPS
The ovine back chops are over wrapped and then boxed.
OVINE BACKSTRAP
All our backstops are vacuum packed and then boxed. Our backstops are available PAD or with skin.
OVINE TENDERLOIN
The tenderloins are vacuum-packed and boxed.
OVINE 95% VL
Ovine 95% is vacuum packed and bagged in 10 kg bags then boxed.
MUTTON BREAST
Mutton breast is over wrapped then boxed. Vacuum packaging is available
OVINE FAT 20% VL
Ovine fat is available in both frozen naked blocks or fresh in boxes.
